Baadal Chai

Ingredients

  • 1 cup water
  • 1 cup whole milk
  • 1 1/2 tbsp sugar
  • 2 tbsp black tea leaves
  • 1/4" piece of ginger
  • 2 pods cardamom
  • 1/2 tsp (2mL) Kewra water

Directions

  1. In a 3 qt saucepan, set the water on high to boil.
  2. Crush the ginger and cardamom lightly with a mortar and pestle or the back of a knife, and add to the water.
  3. Scald the milk in another saucepan, or microwave it for 1 minute.
  4. When the water reaches a rolling boil, add the tea leaves, and stir once. Let boil for 30 seconds.
  5. Add the sugar and milk and stir well.
  6. When the liquid starts to boil again, turn off the burner, stir, cover the saucepan, remove from the burner and let sit for 1 minute.
  7. Add the kewra water, stir, and drain into cups
