Pie Cookies

Ingredients

  • 2 (9") pie crusts
  • 3/4 cups (21 oz) fruit filling
  • 1 egg
  • A few pinches flour

Directions

  1. Preheat oven to 350°F.
  2. Dust your work surface with flour, and lay out one of the pie crusts. Cover it with an even layer of pie filling.
  3. Lay out the second pie crust and cut it into 1/2" strips. Using these strips, make a lattice over the bottom part of the cookies.
  4. Beat the egg with 1 tbsp of water and brush the egg wash over the lattice layer.
  5. Cut out the cookies using a 2" cookie cutter. Transfer the cookies to an ungreased baking sheet.
  6. Bake at 350°F until the cookies are lightly golden, ~15-25 minutes

Apple Pie Cookies:
Spread ~1 cup of caramel sauce over the bottom pie crust. Spread apple pie filling over the caramel sauce, making sure the apple pieces are diced. Combine 1 tbsp each of cinnamon, sugar, and nutmeg, and sprinkle the spice mixture over the lattice top after applying the egg wash.

Blueberry Pie Cookies:
Use blueberry filling. Sprinkle sugar over the lattice top after applying the egg wash.
